Top Shelf Preserves began when owner Sara Pishva threw herself right into it, cranking out syrups and ferments and working with unfamiliar produce to make new and interesting pickles, marmalades and jellies. She started to find a style, streamlined her recipes and came up with a great lineup of pickles and preserves.
She moved into her own kitchen in 2014 and worked with fierce determination around the clock to understand how to make a profitable business out of something so labour intensive. Working with local retailers at a moment when there was growing interest in farm to table food and locally made goods helped get her products into the hands of some devoted customers.
"I wanted to get more into pickling and preserving and just went for it at some point, convinced that I didn’t really have anything to lose and it would be a fun summer of endless trips to the farmer’s market and hardware store (for more jars)."
